Fantasia di zucchine

(Fantasy of Zucchini)



(This is for 4 people)
 
Ingredients
  1. 21.17 oz zucchini
  2. 3.5 oz chopped black olives
  3. 3.5 oz chopped anchovies in oil
  4. 4 tablespoons extra virgin olive oi1
  5. 1 clove garlic, minced
  6. 2 tablespoons vinegar
  7. 1 grated lemon
  8. salt to taste
Procedure

In a large pot of boiling, salad water (about 70.550 oz of water).
Cut the zucchini, long 3.9 inches and high 0.120 inches (it's most important to cut fine it).
Pour it in boiling water and cook it for 4 minutes than drain and pass it under cold water. Dry it with paper towels.
Pour the zucchini in a salad bowl and dress it with the others ingredients into the recipe.
Mix gently and cover it with a lid for 1 hour (let it stand for 1 hour).
You can serve it as a starter, side dish of white meat,
roast or fish.
