Alici speziate

(Spicy anchovies)

(This is for 4 people)

Ingredients


28.220 oz fresh anchovies
7.055 oz flour
1 lemon
½ tablespoon curry powder
½ tablespoon paprika
1 pinch of cinnamon powder
1 pinch of aniseed
10.580 oz soybean oil
salt to taste

Procedure

Clean the anchovies, remove the heads, viscera and bones. Wash them with cold water.
Put them in a pot with cold water and lemon juice for 2 minutes. Drain the anchovies with colander.
Mix in the flour half a tablespoon of curry powder, half a tablespoon of paprika, a pinch of cinnamon and anise seeds.
Dip the anchovies in the flour one by one and put them on a sheet of baking paper.
In a large skillet pour 10.580 oz of soybean oil in it the zest of half lemon cut in strips, heat the oil over medium heat and allow to brown the lemon peel.
Add the anchovies well distributed in the pan and cook them 4 minutes on one side and 4 minutes on the other.
Drain them on paper towels and add salt to taste.
Anchovies can be served with mixed salad, bean salad, tomato salad dressed with extra virgin olive oil, salt, oregano and half a clove of garlic.

I noticed that frying using soybean oil makes the food healthier, light and crisp. Try it then tell me what you think!!!
