Tagliatelle Paglia e Fieno con ragù e piselli

Hay and Straw Noodles with meat sauce and peas

(This is for 4 people)

Ingredients

14.110 oz hay and straw noodles
7.055 oz minced veal meal
3.530 oz peas
35 'ciliegini' tomatoes at cubes
1 onion
1 cup of 'prosecco' white wine
2 tablespoons extra virgin olive oil
1 sprig of basil
parsley
salt and black pepper to taste

Procedure

Boil water in a pot for pasta.
In a pan put a tablespoon of extra virgin olive oil,1/2 chopped onion and let it gilt.
Add 7.055 oz minced veal, add salt to taste and ½ cup of prosecco white wine.
Cook it over medium heat for 5 minutes.
In another pan, put a tablespoon of extra virgin olive oil, ½ chopped onion and let it gild.
Then add in it 3.530 oz of peas ½ cup of prosecco white wine salt and a bit of finely chopped persley.
Let it cook over medium heat for 20 minutes.
Add the meat to 35 ciliegini tomatoes at cubes and cook 15 minutes over medium heat.
Cook the pasta according to package directions.
Drain the pasta and dress it with meat sauce and peas.
Sprinkle it with chopped basil and black pepper.
Serve it immediately.
